Mince horseradish in the food processor, then place in a jar and cover with vinegar; do not add sugar.
My father often prepared it, when we had horseradish in our garden...

I found this in Fanny Farmer Cookbook:
"Horseradish roots
Salt
White vinegar
Scrape the outside of the horseradish roots until clean and drop them into cold water to prevent dicoloration. Drain and chop i a food processor or in a blender with a little vinegar. Spoon into clean pint jars, filling them about two thirds full. Add one teaspoo of salt to each jar, the fill them with vinegar. Close the jars and refrigerate."
I have not tried this myself.
